Finding the holy grail, otherwise known as good vegan parmesan

A few years ago I was starting out on my using-refill-for-shopping journey (at the lovely Harmless store, North London), and was introduced to a very special product.

Available to buy packaging-free was ‘grated’ vegan parmesan. What was this magical mysterious substance and how exactly was it made?

Little did I know it is literally the simplest to make and is so very effective at substituting parmesan.

I could eat it straight from the pot but it is so versatile and great in so many dishes – in pasta sauces, sprinkled over salad, as a pizza topping, added to make homemade pesto, and so much more.

VEGAN PARMESAN

Ingredients

3 tbsp nutritional yeast, 3/4 cup cashews (raw), 1/4 tsp garlic powder, 3/4 tsp sea salt

Add all the ingredients to a food processor and mix/pulse til a fine meal

And that’s it! Simple

Store in a fridge to keep fresh and it will last for a few weeks (although you might not be able to resist it and it’ll go much quicker)
